Greek Pie with Angel Hair Pasta, Milk and Cheese

Ingredients:

  • 4 eggs
  • 1 tsp mint
  • 1 tsp grated lemon , zest of (of 1 lemon)
  • 1 lb fresh unsalted greek mizithra cheese or 1 lb anthotyro cheese

Directions:

  1. Bring a large pot of lightly salted water to a boil and cook the pasta to al dente.
  2. Remove and strain.
  3. Preheat the oven to 350°F.
  4. In a large bowl, beat the eggs.
  5. Add the milk and continue beating.
  6. Crumble the mizithra and stir it into the mixture together with the mint and zest, and combine well.
  7. Add the pasta and melted butter and mix thoroughly.
  8. Lightly butter a 12-inch round baking pan.
  9. Spread the mixture evenly in the pan and bake for about one hour until golden and set.
  10. Remove, cut into pieces and serve.
