Greek Meatball Soup

Ingredients:

  • 3 eggs
  • 3/4 cup bread
  • 1/4 cup butter

Directions:

  1. Fill large pan with water.
  2. Add butter.
  3. In a different bowl combined meat, 1 egg, rice & bread.
  4. Form meatballs.
  5. Add meatballs to water.
  6. Add additional rice if you like a thicker soup.
  7. Cook meatballs (time depends on size).
  8. In a different bowl whip 2 egg whites until firm/peaks.
  9. Add yolks & lemon juice (to taste).
  10. SLOWLY add soup broth & blend with egg/lemon mixture.
  11. SLOWLY add more soup broth (about 3 cups total).
  12. Combine broth/egg/lemon mixture to pan with soup & allow to sit for 5 minutes.
  13. Soup will be frothy.
