Ingredients:

Directions:

  1. Prick the eggplant with a fork and bake them in a hot oven.
  2. When they are soft, cool them and peel them carefully.
  3. Chop the eggplant and put them through a blender until they become a pulp.
  4. Gradually add the onion, garlic, parsley and lemon juice to this mixture and continue blending until it becomes soft.
  5. Season to taste.
