Grandpa Joe's Cucumber Salad

Ingredients:

  • 4 -6 medium cucumbers
  • 1 tbsp paprika
  • 1 tbsp salt
  • salt and pepper , to taste

Directions:

  1. Peel and slice cucumbers very thin (like potato chips).
  2. Place sliced cucumbers in a bowl of salted water and soak for an hour.
  3. Drain and squeeze cucumbers dry; place in a colander and let drip dry for an hour.
  4. After an hour, and the Cucumbers are somewhat dry, mix in the previous made dressing.
  5. Add the sliced Onion and the Paprika.
  6. Add Your favorite Italian Dressing (or make from scrach).
  7. Salt and Pepper to taste.
  8. Let sit in Refrigerator a couple of hours (or over night)then serve.
  9. YUM.
