  1. Combine onion, sugar, salt and pepper then stir gently.
  2. Melt butter in a heavy skillet then add onion mixture and cook stirring frequently 8 minutes.
  3. Stir in sherry and cook 3 minutes then spoon into serving dish and sprinkle with cheese.
