Good Morning Crepes With Cheese Filling and Fresh Fruit

Ingredients:

  1. Mix flour, milk, eggs, sugar, vanilla and salt until smooth. Heat a 6 inch skillet with low sides or crepe pan over medium heat. Spray lightly with olive oil. remove from heat and add 1/4 cup of crepe mix. Rotate pan until a thin layer of batter covers the cook surface. Return to heat. Cook until edges of crepe begin to turn light brown and appear dry. Use a spatula to gently lift one edge. Invert pan over paper towel. Crepe should drop out.
  2. For cheese mixture, place cottage cheese and cream cheese in a blender until smooth. Add sugar and vanilla for taste.
  3. Spoon cheese mixture into crepes and add fruit. Roll up. Sprinkle with powdered sugar. Enjoy.
