Cottage Cheese and Fresh Fruit Plate

Ingredients:

Directions:

  1. Slice cantalope in half and remove seeds. Slice cantaloupe and kiwi.
  2. Rinse strawberries, tomatoes under cold water and pat dry. Slice strawberries in half. Slice tomatoes about 1/4 inch thick.
  3. Assemble the plates. Place 4 cantaloupe slices on each plate. Place 2 sliced tomatoes in center of plate and top each with a scoop (#24) or about 2 ounces low-fat cottage cheese. Place 4 sliced strawberries and 2 slices kiwi on the plates.
  4. Chill plates for 10 minute.
  5. Drizzle Balsamic Glaze over fresh fruit.
  6. Garnish plates with fresh mint leaves.
  7. Chef Note: Use any Balsamic Glaze you like.
