  1. Combine first 6 ingredients in a large saucepan over medium-high heat; add pineapple and apple. Bring to a boil; reduce heat, and simmer 10 minutes or until apples are soft. Remove from heat. Cover, and let stand 15 minutes. Remove lemon rind and cinnamon stick. Return fruit mixture to a simmer. Combine cornstarch and water; stir into fruit mixture. Cook until slightly thick (about 4 minutes).
