Golden Onion Soup

Ingredients:

  • 1/4 cup butter
  • 2 thinly sliced onions
  • 3/4 tsp thyme
  • 1/2 cup dry wine (changing wines changes flavor)
  • 2 tbsp. soy sauce
  • 1 tbsp. honey
  • 1/4 heaping cup shredded swiss cheese

Directions:

  1. Melt butter in a sauce pan over medium heat
  2. Add onions thyme and season with pepper
  3. Cover and lower heat to low and cook very slowly till onions are translucent,stirring occasionally,about 20-25 minutes
  4. Cook unti they are brown and well carmilized
  5. Add flour to onions and stir until browned( don't burn) scraping bottom for about 5 minutes
  6. Add water,wine,soy sauce and honey.
  7. Bring to a boil and reduce heat to a very slow simmer and cook till slightly thickened, about 1 1/2 hours
  8. Add swiss cheese ,stir until melted and serve with crusty bread
