Golden Apple Mincemeat Cake Oh Yeah

Ingredients:

Directions:

  1. Preheat oven to 350 degrees
  2. Combine flour, baking powder, allspice, cinnamon and salt in large bowl, set aside
  3. In large bowl of electric mixer, combine oil and brown sugar; beat well
  4. Add half the flour mixture; mix well
  5. Blend in grated apples, mincemeat, pecans and vanilla
  6. Add remaining flour mixture
  7. Add eggs, 1 at a time, beat well after each addition
  8. Turn into a greased 10 inch Bundt pan
  9. Bake 1 hour OR until toothpick inserted near center comes out clean
  10. Cool in pan 15 minutes
  11. Turn out onto wire rack
  12. When cool, sprinkle with powdered sugar
  13. NOTE: may serve with whipped cream or HARD SAUCE
  14. HARD SAUCE
  15. Beat 1/2 cup unsalted butter and 1/8 teaspoon salt until light and fluffy. Gradually beat in 1 cup powdered sugar. Stir in Rum or rum flavoring to taste. Refrigerate 1 hour.
