Mincemeat Apple Bundt Cake

Ingredients:

  • 2 cups flour
  • 1/2 cup brown sugar , packed
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp.ground cloves
  • 1/3 cup applesauce
  • 1/3 cup apple juice
  • 1/2 cup sugar
  • 4-1/2 tsp. cornstarch
  • 1 cup water
  • 2 tbsp. butter
  • 1 1/2 tsp. lemon rind, grated
  • 1 tsp. lemon juice

Directions:

  1. Preheat oven to 350
  2. In mixing bowl, combine flour, brown sugar, baking powder, baking soda, cinnamon and cloves
  3. In another bowl, combine eggs, mincemeat, applesauce, juice and butter
  4. Stir into dry ingredients until just moistened
  5. Pour into a greased 9 inch bundt cake pan
  6. Bake 35-40 minutes or until a toothpick inserted in center comes out clean
  7. Cool for 10 minutes then remove from pan to cooling rack
  8. Sauce
  9. In saucepan, add sugar and cornstarch then mix to combine
  10. Whisk in water until smooth
  11. Bring to boil and cook, stirring for 2 minutes
  12. Remove from the heat and stir in butter until melted
  13. Add lemon zest and juice
  14. Stir until well combined
  15. Serve warm with cake
