Ingredients:

  • 2 medium tomatoes
  • 1/4 tsp. cayenne
  • 2 oz. ginger
  • 2 medium onions
  • 2 medium potatoes
  • 1/2 tsp. turmeric
  • 1 1/2 tsp. coriander
  • 1 tsp. cumin
  • 1 tsp. curry powder
  • 2 tsp. olive oil

Directions:

  1. Bake cauliflower and potatoes (cut up) in oven until tender
  2. Saute onions in olive oil until brown.
  3. Add ginger and saute until dark brown
  4. Add grated tomatoes and cook until oil breaks out.
  5. Add cauliflower, cayenne, turmeric, coriander, salt and potatoes.
  6. Add a T. of water and cover, cook for five toten min.
  7. Add cumin and curry and serve.
