Gluten Free Gingerbread Pancakes

Ingredients:

  • 2 cups baking mix
  • 3 tbsp sugar
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp ginger
  • 3/4 tsp allspice
  • 2 eggs
  • 1 1/2 cups milk

Directions:

  1. In a bowl, whisk baking mix, sugar, spices and crystallized ginger. In separate bowl, beat eggs. Add milk and butter to eggs and mix well. Pour wet ingredients into dry ingredients and gently stir until just combined.
  2. Cook on griddle.
