Glazed Carrot Puree With Fresh Ginger

Ingredients:

Directions:

  1. Place the carrots in a medium saucepan with water to cover.
  2. Add the butter and bring to a boil.
  3. Simmer until the carrots are tender, about 5 minutes.
  4. Use a slotted spoon to transfer the carrots to a food processor or blender, leaving the cooking liquid in the saucepan.
  5. Add the ginger and puree until smooth.
  6. Season with salt and pepper to taste.
  7. Return the carrot cooking water to a simmer, then reduce the heat to medium-low and simmer, taking care not to burn the liquid (there are a lot of natural sugars from the carrots in it), until the liquid is reduced to about 2 tablespoons and is syrupy, about 15 minutes.
  8. Add this glaze to the puree and pulse to blend.
