Ingredients:

  • 3/4 cup rice flour
  • 1 cup soy flour
  • 3/4 cup potato starch
  • 1/4 cup tapioca flour
  • 1 tbsp xanthan gum
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 400 ml water
  • 3 tbsp oil
  • 3 eggs
  • 1 tsp vinegar
  • 1 tbsp caraway seed

Directions:

  1. Mix dry ingredients together in bowl.
  2. Warm water and mix with wet ingredients.
  3. Mix wet and dry ingredients together thoroughly and spoon into muffin pan. Bake at 350 for 20 minutes or until done.
