Ingredients:

Directions:

  1. Sauté onion, green pepper, and red pepper in butter in a heavy oven proof Dutch oven until tender.
  2. Stir in rice and next 7 ingredients, and bring to a boil.
  3. Remove from heat; cover and bake at 350 degrees for 30 minutes.
  4. Stir remaining vegetables into rice mixture.
  5. Cover and bake an additional 45 minutes or until liquid is absorbed and vegetables are crisp-tender.
