Ingredients:

Directions:

  1. In bowl, combine brown sugar, flour, cocoa, baking soda and baking powder, cinnamon and salt.
  2. In separate bowl, beat together egg and egg white.
  3. Beat in the buttermilk, coffee and oil.
  4. Make a well in sugar mixture and pour coffee mixture into well and whisk just till blended.
  5. Pour into greased 8-inch square cake pans.
  6. Bake in your oven for 30 to 40 minutes.
  7. Test with a toothpick to see if the wood is clean and then its done!
  8. The cake should spring back when you press down on it.
  9. Let cool in pan on rack for 20 minutes.
  10. Icing:
  11. In small saucepan, combine cocoa, sugar and cornstarch.
  12. Whisk in milk until blended, then corn syrup and vanilla.
  13. Bring to boil over medium-high heat, whisking constantly, reduce heat to low and cook, whisking for 1 to 2 minutes or till thickened and glossy.
  14. Let cool for 5 minutes.
  15. Spread evenly over cake.
