Ingredients:

  • 4 oz butter
  • 1 cup sugar (small cup)
  • 1 egg
  • 1 cup flour
  • 1 cup sultanas (small cup) or 1 cup raisins (small cup)
  • 1 cup coconut
  • 2 tsp golden syrup (optional)

Directions:

  1. Melt butter and sugar and golden syrup if using, in a pot over moderate heat until sugar is dissolved.
  2. Remove from heat and add all other ingredients.
  3. Pat out into a sponge roll tin approx 12 x 8 and bake in a moderate oven, 350°F/180°C for 20 minutes.
  4. Cut into fingers/bars when cold.
