Fructose Friendly Potato And Chive Bake

Ingredients:

  • 1.5 kg potatoes, peeled, quartered ( go for the type of potato that you can tolerate.)
  • 300 ml cream
  • 2 tbsp chives

Directions:

  1. Preheat oven to 200c or 180c for fan forced.
  2. Place potatoes in a large baking dish.
  3. Combine remaining ingredients.
  4. Pour over potatoes and toss to combine.
  5. Cover with poil and bake for 45 minutes.
  6. Remove poil and bake for another 15 minutes, until potatoes are tender and golden.
