Fried Cucumbers

Ingredients:

  • 4 medium sized cucumbers
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions:

  1. Peel cucumbers and cut into about 1/3 inch slices.
  2. Sprinkle with salt and pepper.
  3. Dip into crumbs, the egg then crumbs again.
  4. Fry in butter or hot oil until browned.
  5. Drain on absorbent paper towels.
