Fresh Cranberry Orange Relish

Ingredients:

  • 1 (12 oz) package fresh cranberries
  • 1 -2 medium orange
  • 1 cup sugar
  • 1/2 cup walnuts
  • 1/2 cup orange juice

Directions:

  1. Put washed, drained cranberries in a food processor with peeled, quartered, seeded orange. Pulse for a few seconds, just until coarsely chopped. Stop and scrape down sides of bowl, if necessary, to chop evenly. Add walnuts and pulse until chopped.
  2. Add Sugar (and juice or liqueur, if desired) and pulse until mixed thoroughly.
  3. For added depth, 1/4 teaspoon cinnamon and/or ginger may be added.
  4. Stir well and refrigerate for at least 2 hours before serving.
  5. Store in refrigerator for one week or may be frozen for up to 2 months.
