Ingredients:

Directions:

  1. Line 5x9 inch pan with foil.
  2. Butter sides of a heavy saucepan.
  3. Combine sugar,corn syrup,and jalapeno pepper.
  4. Stirring all the while,cook until sugar dissolves.
  5. Take pastry brush,that has been dipped in hot water,and brush down and sugar crystals on sides of pan.
  6. Place candy thermometer in pan,don't touch the bottom.
  7. Raise heat and bring to a boil.
  8. While you are cooking the sugar,mix water,pectin and baking soda in another saucepan.
  9. Stirring all the while,cook pectin mixture until it boils,remove from heat.
  10. Meanwhile back to your sugar,allow it to reach 290 degrees.
  11. Bring pectin mixture back to boil,stirring all the while.
  12. Slowly pour sugar mixture into boiling pectin mixture,cook for 2 minutes.
  13. Remove from heat,stir in green food coloring.
  14. Pour your mixture into the pan.
  15. Allow to cool for 2 hours or until it becomes firm.
  16. Raise your candy from pan,cut through with greased knife,into 1 inch pieces.
  17. Melt the white chocolate and paraffin over low heat.
  18. Placing each jelly on the end of a stick,spoon the melted white chocolate over until completely covered.
  19. Lay your candy on a wax covered sheet.
  20. Chill out for about 10 minutes.
