Ingredients:

  • 3 cup flour
  • 1 envelope dry yeast
  • 2 tsp sugar
  • 1/4 tsp salt
  • 1/4 cup olive oil
  • 1 cup very warm water (120-130 f)

Directions:

  1. Mix 1c flour, yeast,sugar, and salt in a medium bowl
  2. Add olive oil and water
  3. Beat on low for 1 minute, scrapping the sides frequently
  4. Increase to medium for 1 minute
  5. Mix in remaining flour until the dough is easy to handle
  6. Turn onto lightly floured surface
  7. Knead for 7 minutes
  8. Place in greased bowl and turn once to coat
  9. Let sit in warm place for 1.5 hours to rise
  10. Preheat oven to 425 F
  11. Punch down dough and divide into desired amount of pieces
  12. Form dough into balls let rest for 5 minutes
  13. Roll each ball 1/2 inch thick
  14. Place on greased cookie sheet, cover and let rise for 15 minutes
  15. Prick with fork on tops
  16. Brush with Olive oil and sprinkle with cheese
  17. Bake until Golden(about 13-15 minutes)
