Microwave English Muffin Bread

Ingredients:

  • 5 cups flour , unsifted
  • 2 tbsp dry yeast
  • 1 tbsp sugar
  • 2 tsp salt
  • 1/4 tsp baking soda
  • 2 cups milk
  • 1/2 cup water

Directions:

  1. Combine 3 cups flour, yeast, sugar, salt and soda in large bowl.
  2. Heat milk and water until warm but do not boil.
  3. Add to flour mixture and mix well.
  4. Stir in rest of flour.
  5. Grease 2 glass, 8-inch loaf pans, sprinkle each with cornmeal.
  6. Divide batter into two equal parts and carefully place in pans.
  7. Place pans in large rectangle with water.
  8. Place in oven one warm (200°F).
  9. Let rise 35-45 minutes or until dough rises to top of pan.
  10. Place in microwave (one loaf pan at a time) and bake on High for 6 1/2 minutes.
  11. Remove and cool 5 minutes.
  12. Remove from pan and slice.
  13. Wrap in foil and store in freezer.
