Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease 2 loaf pans.
  3. In a large mixing bowl, stir together the flour,sugar,cinnamon& baking soda.
  4. Add oil, beaten eggs, food coloring& almond extract.
  5. Mix well.
  6. Drain strawberries,reserving 1/2 cup of juice for filling.
  7. Fold in the drained strawberries.
  8. Pour batter evenly in to prepared pans.
  9. Bake at 350 degrees 60-70 minutes or until a toothpick inserted into the center of loaf comes out clean.
  10. Let cool 10 minutes in pans.
  11. Remove to a wire rack to cool completely.
  12. In a medium mixing bowl, mix the cream cheese& reserved strawberry juice.
  13. Slice each loaf horizontally twice, to make 3 layers.
  14. Spread the cream cheese mixture between the layers& reassemble the loaves.
  15. Wrap loaves in plastic wrap, and chill in the refrigerator to set the filling.
  16. Slice& serve.
