Ingredients:

  • 5 cup (3 1/4 lbs.) fig
  • 1/2 cup lemon juice
  • 1/2 cup water
  • 1 box(es) pectin
  • 1/2 tsp butter
  • 7 cup sugar

Directions:

  1. Trim, chop or grind, combine with lemon juice + water in pot, add pectin + butter, bring to a rolling boil, stir constantly.
  2. Add sugar, return to rolling boil + boil for 1 minute.
  3. Remove, skim foam.
  4. Put in jars, process for 10 minutes.
