Ingredients:

  • 3 1/4 lbs ripe figs
  • 1 1/2 tsp grates lemons, zest of
  • 1/2 cup water
  • 1 (1 3/4 oz) box sure- jell
  • 7 1/2 cups sugar

Directions:

  1. Wash figs in cold water and remove stems.
  2. Place figs in a large saucepan and add the lemon juice, zest and water.
  3. Stir well and add the sure jell.
  4. Turn heat onto high and stir until a hard boil is reached.
  5. Add the sugar.
  6. Stirring constantly bring mixture to a hard boil.
  7. Boil for 1 minute.
  8. Remove from heat and skim off foam.
  9. Stir and skim for 5 minutes.
  10. Ladle into clean hot sterile jars and seal.
  11. Process in a boiling water bath for 10 minutes.
