Feta Stuffed Chicken Breast

Ingredients:

  • 2 cups spinach
  • 1/2 cup mushrooms
  • 2 eggs
  • 1/2 lb feta cheese
  • 1 tsp dill weed
  • 1 pinch nutmeg
  • 1 salt and pepper
  • 1/6 cup breadcrumbs

Directions:

  1. Blanch spinach, drain, cool, and chop.
  2. Saute chopped onion, and chopped mushrooms.
  3. Add to spinach. Add remaining ingredients, except chicken.
  4. Slice chicken breasts but not all the way through, making a pocket. Divide filling between 6, 4 ounce chicken breasts. Cover with flap of chicken. Bake at 350 for 40 minutes.
  5. Serve with baby potatoes or rice and vegetables
