Fabulous Mocha Muffins

Ingredients:

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/4 cup baking cocoa
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt or less if desired
  • 1 cup soy milk ( plain , vanilla , chocolate etc )i use plain as this is already a very sweet recipe
  • 1/2 cup canola oil
  • 2 tbsp soy yoghurt
  • 1 tsp vanilla
  • 1/2 cup regular or vegan chocolate chips

Directions:

  1. In one bowl sift together all dry ingredients and blend well.
  2. In second bowl mix all wet ingredients.
  3. Combine both by hand mixing with large fork or wooden spoon.
  4. Fold in chips ( hmm nuts may be great too! )
  5. Divide evenly into paper lined muffin tins, 12 small, 9 medium
  6. Bake 18 to 20 minutes or until toothpick comes out clean.
  7. Do not overbake
  8. Cool completely on rack.
  9. These freeze well.
