English and Scottish Cranberry Duff

Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup milk
  • 1/4 cup melted butter (1/2 stick)
  • 1/2 cup butter (1 stick)
  • 1 cup sugar
  • 3/4 cup cream
  • 1/2 tsp cinnamon

Directions:

  1. Preheat oven to 350°.
  2. Sift together the dry ingredients. Add the cranberries, milk, melted butter and vanilla. Mix well. Pour into an 8 inch square buttered baking dish.
  3. Bake at 350° for 40 minutes.
  4. After the duff has been in the oven for 25 minutes, make the butter sauce by combining the butter, sugar and cream in a heavy-bottomed saucepan. Bring to a boil and then lower the heat. Stir in the vanilla and cinnamon and simmer for 10 minutes.
  5. Serve warm drizzled with the sauce, with extra sauce on the side. Enjoy!
