Eggplant a La Tammy Wynette

Ingredients:

  • 1 medium eggplant
  • 1/4 cup flour
  • 2 tbsp butter
  • 14 1/2 oz crushed tomatoes
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 dash nutmeg

Directions:

  1. Peel and dice the eggplant.
  2. Dip in flour.
  3. In a medium size skillet, saute eggplant in the butter, when browned slightly, remove.
  4. In same pan, saute onions, do not allow to brown.
  5. Place eggplant in a 1 1/2 quart casserole dish.
  6. Add tomatoes, oregano, salt and pepper.
  7. Mix carefully to blend ingredients.
  8. Top with cheese and a sprinkle of nutmeg.
  9. Bake 325 degrees F. for 20 minutes, until hot & bubbly.
