Egg & Potato Hash W/ Canadian Bacon

Ingredients:

Directions:

  1. Warm oil in a non-stick skillet over high heat.
  2. Add potatoes and onion; cook, stirring frequently, for 5 minutes, or until onion starts to brown.
  3. Add garlic and season with salt and pepper.
  4. Cover and cook for 10 minutes, or until potatoes are tender.
  5. If potatoes start to stick, add a little water or chicken broth to pan.
  6. Add the tomato and cook for 3 minutes, or until just softened.
  7. Use large spoon to make 4 depressions in mixture.
  8. Break an egg into each depression.
  9. Season eggs with salt and pepper, cover, and cook for 3 to 4 minutes.
  10. Sprinkle with cilantro.
  11. Serve with 2 slices of Canadian bacon.
