Ingredients:

  1. Heat oven to 400º.
  2. Mix the jam and mustard in a small bowl.
  3. Rub pork with the salt and pepper.
  4. Roast pork for about 8 minutes, then turn and brush the top with the glaze.
  5. Roast for another 8 minutes then turn and glaze the top.
  6. Pork is done when the meat thermometer reads 160º, or after about 25 total minutes.
