Easy Roasted Garlic Salsa Fresca

Ingredients:

  • 1 large tomato
  • 1/2 onion
  • 2 -8 cloves garlic (as many as you can stand!)
  • 1/4 cup cilantro
  • 1 dash salt

Directions:

  1. Place garlic cloves (do not peel) in a small, heavy bottomed pan on med.
  2. Heat.
  3. Heat for 10 minutes, turning often.
  4. Let cool.
  5. Chop tomato and onion.
  6. Mince cilantro.
  7. Peel garlic and mince.
  8. Mix it all together with salt and enjoy!
