Dried Fruit Oat Bars

Ingredients:

  • 1 1/2 cups water
  • 3/4 cup water
  • 1 1/2 cups oatmeal
  • 1 cup quinoa flakes (optional, swap with more oatmeal if necessary)
  • 1 1/2 cups whole wheat flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda

Directions:

  1. Preheat oven to 350F.
  2. Combine dried fruits, water and 1/4 cup of maple syrup in a pot.
  3. Heat, stirring, until thickened - 5-7 minutes. Cool slightly.
  4. Combine remaining syrup and water, stir into remaining ingredients.
  5. Press half of the oat mixture into the bottom of a lightly greased 13x9 pan with lightly moistened hands.
  6. Spread the fruit filling overtop the crust.
  7. Crumble the remaining crust ingredients overtop the fruit.
  8. Bake 25 minutes. Cut while still warm.
