Cranberry Walnut Muffins

Ingredients:

  • 2 cups natural bran
  • 2 1/2 cups whole wheat flour
  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 cup butter
  • 1 1/2 cups sugar
  • 4 eggs
  • 4 cups buttermilk
  • 4 cups oatmeal
  • 2 cups walnuts
  • 2 cups cranberries

Directions:

  1. Pour boiling water over bran and let sit.
  2. Mix flours, soda and salt in large bowl.
  3. Cream butter with sugar.
  4. Add eggs and buttermilk.
  5. Add to dry ingredients and bran.
  6. Add oats, nuts and cranberries.
  7. Mix well.
  8. Fill in greased muffin tins.
  9. Bake in batches.
