Ingredients:

  • 1 tsp red pepper
  • 4 cloves garlic
  • 1/4 cup plus 2 tbsp dill seeds
  • 2 1/2 cups white vinegar
  • 2 1/2 cups water
  • 1/4 cup salt

Directions:

  1. Cut ends from beans; remove strings, if necessary. Pack beans vertically into 4 hot sterilized jars. Place 1/4 teaspoon red pepper, 1 clove garlic, and 1 1/2 tablespoons dill seeds in each of 4 jars.
  2. Combine vinegar, water, and salt in a medium-size stainless steel saucepan; bring to a boil, and pour over beans, leaving 1/2- inch head space. Remove air bubbles. Cover with metal lids, and screw bands tight. Process in boiling-water bath 10 minutes.
