Dilled Spinach Rice

Ingredients:

Directions:

  1. Heat olive oil over medium heat in large skillet or electric skillet.
  2. Add garlic and spinach and stir until spinach is wilted.
  3. Remove and chop. Return to pan.
  4. Add rice and stir.
  5. Add 2 cups of hot water and salt.
  6. Bring to a boil over hight heat; cover, lower heat, and simmer until rice is tender, about 15 minutes.
  7. Stir in milk, dill, lemon juice and pepper.
  8. Transfer to baking dish.
  9. Cover with foil and bake at 375 degrees for 10 to 15 minutes.
