Ingredients:

Directions:

  1. Boil the chicken and sausage until half way done.
  2. Dice the chicken and slice the sausage into bite sized peices.
  3. Keep the broth in case ya need it to put added moisture into the Jambalaya or you can use it as stock in other recipes.
  4. Put the canned tomatoes or fresh with juice in a pan or pot.
  5. Add your creole seasoning and tobasco sauce a little at a time until you get your desired taste. Remember, you can always add more spice, but it's hard to take it out of a dish.
  6. Add the veggies, chicken and sausage, NOT THE SHIRMP YET.
  7. Let it cook down some on a medium low heat. If it needs more juice, add some of the left over chicken/sausage broth.
  8. When the veggies and meat are done and juice has thickend turn the heat on low and add the shirmp.
  9. Let the heat of the dish and low heat warm the shrimp for about 2 to 3 minutes or until they are hot enough for ya. Do not over cook the shrimp.
  10. Now is the time to add more spices or broth.
  11. You want it thicker if you are having it without rice
  12. You want it wetter if it's being poured over rice.
