Ingredients:

Directions:

  1. Pour 4 cups of water and 1/2 tsp. of salt in a skillet.
  2. Add cinnamon sticks.
  3. Bring to a boil.
  4. Lower flame, add rice and stir well.
  5. Parboil rice until half cooked.
  6. Strain well.
  7. Keep aside.
  8. In a pot, heat ghee on medium flame.
  9. Add raisins, pistachios and almonds.
  10. Stir-fry for 2 minutes.
  11. Add sugar, food colour, pineapple essence and warm water.
  12. Stir until sugar dissolves.
  13. Add saffron and 1/2 to 1 tsp. of cardamom powder.
  14. Mix in the strained rice.
  15. Cover the pot with a lid.
  16. Cook on simmer for 10-15 minutes(your kitchen will smell wonderful while this is cooking!) or until the rice is dry and fluffy, stirring every 5 minutes so that the rice does not stick to the bottom of the pan.
  17. Transfer to a serving tray.
  18. Garnish with pineapple slices, if desired and serve.
