Ingredients:

Directions:

  1. Heat the oil in a large saucepan, when hot, brown the onions.
  2. Add the lentils and then cover with water (will depend on pot size).
  3. Add all other ingrediants and bring to the boil.
  4. Turn heat to low and simmer until the mixture thickens. Add more water if required and stir often so that the mixture doesn't stick to the pan.
  5. Continue checking and stirring for approx 1 hour or until the mixture is the consistancy of cooked oatmeal (or until lentils are tender and tasty!).
  6. Serve with your favourite taco setup.
