Curry Roasted Cauliflower

Ingredients:

  • 1/4 cup olive oil
  • 2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp slivered almonds

Directions:

  1. Preheat oven to 400 degrees.
  2. Mix the olive oil, curry powder, sugar, lemon juice, salt and pepper in a small mixing bowl.
  3. Place the washed and well drained cauliflower florets in a 13 x 9 inch baking dish; pour the oil mixture over the florets and toss gently.
  4. Cover with foil and bake 15 minutes; remove from oven and stir in almonds mixing lightly.
  5. Return to oven and bake uncovered for an additional 10 to 15 minutes or until cauliflower is browned and almonds are toasted.
