Crustless Salmon Quiche

Ingredients:

  • 1 salmon fillet
  • 1/4 medium onion
  • 1 tbsp flour
  • 2 eggs
  • 1/2 cup skim milk
  • 2 tbsp coriander
  • 1/4 cup red capsicum

Directions:

  1. Toss together salmon, cheeses, onion and flour.
  2. Put in a sprayed 9-inch pie plate.
  3. Beat eggs slightly; add milk and pepper sauce.
  4. Pour over salmon mixture.
  5. Bake uncovered in a 350 degree oven 35-40 minutes, or until a knife inserted in the center comes out clean.
  6. Let stand 10 minutes before serving.
