Directions:

  1. In a skillet heat coconut oil at medium high heat until it melts.
  2. Add Potatoes O'Brien and stir to coat with oil as it heats in the skillet. Remember to periodically stir as it cooks.
  3. Slice surimi into desired size (can be done as potatoes are cooking). Set aside.
  4. Put cream cheese in a microwaveable mixing bowl and microwave for 30 seconds to soften. Set aside.
  5. When potatoes begin to brown add surimi and continue cooking stirring occasionally (another minute or two).
  6. Taste a potato and check to see that it has a soft texture and is done.
  7. Add the egg then salt and Old Bay seasoning to taste. Stir and scramble egg into mixture until cooked.
  8. After egg is scrambled into mixture and cooked, pour potato mixture into the large mixing bowl with the softened cream cheese.
  9. Mix until potato mixture is coated with cream cheese and serve. (optional) 1-2 teaspoons of mustard can be added to cream cheese if desired.
