Creamy Orzo With Leeks and Parmesan

Ingredients:

Directions:

  1. Cook orzo in boiling salted water and drain.
  2. While orzo is cooking, melt butter in large sauté pan.
  3. Add leeks and cook over medium heat until they are softened.
  4. Add chicken stock and simmer until the stock almost disappears.
  5. Add cream to the sauté pan with the leek mixture.
  6. Add cooked orzo and heat thoroughly.
  7. Season with salt, pepper and nutmeg to your taste.
  8. If it looks a little dry, add a little extra cream.
  9. Just before serving, add the Parmesan and stir until it melts.
