Ingredients:

Directions:

  1. Melt 1/4 cup butter in skillet over medium heat.
  2. Add leeks and cook until tender
  3. Add stock
  4. Bring to boil
  5. Reduce heat and simmer about 25 minutes
  6. In batches, puree in blender
  7. Melt 1/4 cup butter in saucepan over medium heat
  8. Add flour stir until blended
  9. Mix in half and half, 1 cup at a time, whisking all the while
  10. Add 1/4 cup cheese and blend until melted
  11. 1/4 cup at a time, add remaining cheese, blending until melted
  12. Mix in leek puree
  13. Thin with more stock if needed
  14. Salt and pepper to taste
  15. Garnish with chive
