Ingredients:

  • 1/4 cup oil
  • 1/4 cup vinegar
  • 1/2 cup butter

Directions:

  1. Peel and quarter the plantains.
  2. Boil until they break with the fork.
  3. As the platains are cooking, In a small sauce pan start pickling the onions with the oil and vinegar.
  4. Once they are transparent remove from flame.
  5. Drain the plaintains leaving a tablespoon or 2 of water, mash, add butter.
  6. Finally add onion mix into mashed plantains, folding them in.
  7. Enjoy! If you did it correctly it should stay soft all day.
