Creamed Eggs on Toast

Ingredients:

  • 3 tbsp flour
  • 1/4 tsp salt
  • 1 1/2 cups milk
  • salt , to taste
  • pepper , to taste
  • 6 -8 slices toast

Directions:

  1. To hardboil eggs, simmer on low (barely boiling) for about 20 min.
  2. ,or bring to a boil, cover, turn off heat and let sit for about 20 min.
  3. Cool (run cold water over cooked eggs), peel, then chop the eggs.
  4. Melt the butter.
  5. Stir in the flour and 1/4t salt.
  6. Stir in milk a little at a time and continue to cook until the sauce is thick.
  7. Pour over chopped up eggs which you salt and pepper to taste.
  8. Sprinkle the mixture with paprika.
  9. Spoon over slice of toast.
