Ingredients:

Directions:

  1. Melt butter in large pot.
  2. Add onions, carrots, and celery, cook for 10-15 minutes, stirring occasionally.
  3. Add potatoes and parsley, stir until coated.
  4. Stir in stock, cook partially covered until potatoes are tender-about 20 minutes.
  5. Puree.
  6. Stir in cream.
  7. Add salt and pepper to taste.
  8. Serve hot or cold.
  9. Reheat without boiling.
  10. Makes 7 cups.
