Cream of Carrot Soup

Ingredients:
4 tablespoons butter
4 carrots, sliced
2 medium potatoes, diced
1 onion, chopped
1 stalk celery, chopped
2 sprigs parsley
5 cups chicken stock
1 cup heavy cream
salt
fresh ground pepper
Directions:
1. melt butter in large pot.
2. add onions, carrots, and celery, cook for 10-15 minutes, stirring occasionally.
3. add potatoes and parsley, stir until coated.
4. stir in stock, cook partially covered until potatoes are tender-about 20 minutes.
5. puree.
6. stir in cream.
7. add salt and pepper to taste.
8. serve hot or cold.
9. reheat without boiling.
10. makes 7 cups.
